Peaches & Cream Rise & Shine Oatmeal Pie

Elevate your breakfast the easiest way possible - bake a giant batch of it and it’s always ready!




Vegan Cooking Level: Beginner


Ingredients


2 cups oats

5 cups any unsweetened plant milk

1/2 c. uncooked quinoa

5 tbsp. chia seeds

3 tbsp. maple syrup

1 tbsp. cinnamon

1/2 tsp salt

1/2 c. frozen or fresh raspberries (or other berries or raisins) plus extra for topping

1 c. frozen or fresh peach slices, peeled (or fresh or frozen peeled apple or pear slices)

Optional: Rawnola Sprinkle for topping


How to


Step 1: Preheat oven to 350 degree F. Mix all the ingredients except the fruit slices in a large bowl and pour into a large 9.5" pie plate.


Step 2: Arrange fruit slices and any additional berries or raisins over the top and press down more than half way into mixture so they bake and get soft (if you lay them just on top they may remain tough!). Sprinkle with Rawnola Sprinkle to top, if desired.


Step 3: Place in oven and set timer for 1 hour. That is it!


Serve hot with a drizzle of additional plant milk or Rawnola Sprinkle if desired. This keeps beautifully in the fridge for 5 days as you reheat for breakfasts or snacks and also carries easily in a container with no mess.


Alternatively, this mixture can be made as an overnight oats pie without baking and served in a bowl/container heated or unheated.
