Simple Plant-Based Oil-Free Apple Streusel DELIGHT

I specialize in simple, easy recipes to make this lifestyle permanent AND delicious and this one absolutely delights. It includes no strange ingredients and in fact, you probably have them already in your kitchen right now. So let's get this ON!

Vegan Cooking Level: Intermediate

Ingredients:

4 apples, any type

1 tsp. cinnamon

Rawnola Streusel Sprinkle Topping Ingredients

1 cup oats, coarsely ground

5 Medjool dates, pitted

1/4 cup any nuts (optional)

2 tbsp. unsweetened shredded coconut (optional)

twist of salt

1 tsp. cinnamon

How To

Step 1: Preheat oven to 375 degrees F. Peel, core & dice apples coarsely in 1-inch chunks. Add cinnamon, stir and place in a 3" x 8" inch (or similarly-sized) baking dish or 3 single serve ramekins.

Step 2: In a mini chop or small processor, grind the oats coarsely first. Then add the pitted Medjool dates and all the other ingredients and pulse to process to your desired texture to make the streusel topping. Spoon the streusel topping over the apples in your baking dish to cover the apples, saving any leftover in a small air-tight jar to use on top of N'ice Cream, oatmeal or cereal (like I do).

Step 3: Bake for approximately 45 minutes to 1 hour depending on apple chunk and depth and size of baking dish. Testing that apples are soft and completely give way when pierced with a knife!

Makes 3 servings.

Step 4: Make N'ice Cream: In a larger processor (see video above), place frozen banana chunks in the amount of approximately 2 bananas (for 2 servings), 1/4 cup any unsweetened unflavored plant milk and 1/4 capful vanilla and let sit in the processor for about 2 minutes. Process by pulsing the processor. Add more milk 2 tbsps. at a time until the mixture spins freely and keep pulsing until you get a soft-serve consistency like shown in the video above.
