Spicy Turmeric Oven Fries
Turmeric Oven Fries are one of the greatest vegan treats to add to a meal or even eat as a snack. And they are covered and smothered in cancer-fighting turmeric.
So simple to make, you'll wonder why you haven't made these before!
Vegan Cooking Level: Beginner
Preheat your oven to 425 degrees F.
Ingredients for two servings
4 baking potatoes or Yukon Gold potatoes. (Russet potatoes or large baking potatoes make longer french fries. Yukon Gold produce creamier french fries inside.) Plan on two potatoes for each person, especially if potatoes are not large baking potatoes. And, you want to have leftovers!
2 tbsp. aquafaba (juice from a can of chickpeas)
1/4 tsp. turmeric spice
1 tsp. garlic powder
1 tsp. smoked paprika
1/2 tsp. curry powder
1/2 tsp. salt
1/2 tsp. pepper
How to roast your fries
Step 1: Wash and dry your potatoes to remove any dirt (but leave skin on). Use a large chopping knife on a cutting board to slice into 1/2-inch or smaller french fries, but keep the size more or less uniform so they all cook the same.
Step 2: Place all raw french fries in a large bowl and coat with 1-2 tbps. of the aquafaba mixing with your hands - adding more only if all the potatoes are not coated. (You do not want a puddle in your bowl or on your baking sheet!)
Step 3: Add all the spices and mix thoroughly with a large serving spoon until all the fries are coated.
Step 4: Cover a the largest shallow baking pan you have with parchment paper (which is more non-stick than aluminum foil) or a silicone baking mat.
Step 5: Transfer fries mixture onto the pan and arrange so there is space between each fry. Save the bowl with spices in it.
Step 6: Bake 20 minutes, or until nicely browned on the bottom and remove from oven. Using tongs or a spatula, flip the fries and return to the oven for another 15-20 minutes, or until crispy on the outside and soft on the inside.
Step 7: Return crisped fries back to the original bowl with the spices. Taste and add a few more shakes of salt and pepper if you want.
Save the leftovers!
If you have some fries left over, save them in a container, baggie or tin foil so you can enjoy them as a snack the next day or whenever. Simply warm them up in the toaster oven for about 5 minutes until they crisp up just like they were originally.
